I love Cinnamon ice cream by Velvet Ice Cream Company in Ohio. Two scoops on top of hot apple pie is unforgetable!

My vote is for French Vanilla, with three conditions: (1) It isn't really "french," (2) it must be smothered in chocolate syrup, and (3) it must be smothered in chocolate syrup.
