The key to cooking grits is to add a teaspoon of arm & hammer baking soda to the boiling water prior to adding the grits. Then once ready, plenty of real butter, cheddar cheese or stewed tomatoes. Side dish then becomes main dish. Goood eatin'.
Pan fried grits or cheese grits are a breakfast favorite in Texas.

Exactly. Nothing like a good set of grits.
Flatten out some left over yellow corn grits with sharp cheddar mixed in.
Saute until the outer edge is crispy. It'll have y'all saying uensus.
