Thinking back to several other cars I’ve owned, I’m wondering if a stainless steel with black rubber insert pedal dress up kit has ever been available for our retro birds. I think that would be a nice thing to see in our illuminated footwell.

Well I'd say they work better. The peddle is made of non slip aircraft aluminum ...the stock rubber peddle when wet became very slippery. Not so with the non slip aluminum.
